Bring half wok of water to the boil together with ginger and wine. Add shin of beef to boiling water and blanch for 5 minutes. Remove and rinse well.

In the meantime, bring spicy sauce to the boil, simmer for 15 minutes until well flavoured. Add shin of beef to the sauce, bring back to the boil and then simmer over medium heat for 50-60 minutes until tender.

Remover from sauce and leave to cool.

Slice thinly and arrange on a plate.

Sprinkle with a little spicy sauce and sesame oil to serve.
