作法:

Rinse and trim prawns, remove intestine, mix with marinade and leave aside for 15 minutes Drain well before use. |

Heat 6 tablespoons oil in wok, drain and then dredge prawns with cornstarch, lower prawns into oil and fry until golden brown on both sides. |

Add ginger and spring onion, fry until fragrant |

Sprinkle with wine, then seasonings and quick-fry until slightly dry. |

Dish and serve. |
